Our Wines

Davis Creek Cellars' wines are made from Northwest grown grapes. Most of them come from the Snake River Valley. 

Reds are fermented in small batches, and then  aged in French and/or American oak barrels.  Whites are all cool fermented to preserve crispness.  

2007 Cabernet Sauvignon

Our latest vintage of Cabernet comes from the Williamson Vineyard on the Sunny Slope.  ged for 14 months in 50% new French oak and 50% older American Oak, this cabernet is still fruity with hints of black cherry.  Finish is smoky and spicy with hints of black pepper and aniseed.

2008 Pinot Grigio

Our Second Vintage of Pinot Grigio comes from the Pontin Vineyard of Prosser, Washington.  This light and fruity wine has hints of lemon, melon and pear and would pair well with salmon and pineapple-melon salsa.

2007 Late Harvest Syrah

Our 2007 Late Harvest Syrah came in as 31 brix fruit and from fermentation on has had hints of chocolate and raspberry in both the nose and mouth.  This rich dessert wine would be wonderful with dark chocolate mousse and fresh Northwest raspberries.  Our first vintage of this wine comes from Skyline Vineyards south of Nampa, Idaho.

2008 Chardonnay

Our second vintage of Chardonnay comes from the Bitner Vineyard on the Sunny Slope.  It was fermented and aged on the lees for 10 months in older French oak barrels.  Enjoy this wine with seafood pasta dishes with cream sauce or pair it with Thanksgiving Dinner.

2008 Malbec

Our second vintage of Malbec comes from the Pontin Vineyard located in the Yakima Valley.  It was aged for 8 months in French oak but is still very fruity in both the nose and mouth with hints of strawberry, cherry, and tart pomegranate.  This wine would pair well with bbq pork tenderloin.

2008 Tempranillo

Our second vintage of Tempranillo comes from the Wood River Vineyard near Homedale as well as Windy Ridge Vineyard South of Meridian.  This wine was aged in French oak for 8 months giving it a light smoky finish.  The nose is cherry and rhubarb while the taste is mild cherry and red raspberry with hints of cocoa.

2008 Rose of Syrah 

Our first offering of Rose is made from Skyline Vineyard Syrah.  With a floral nose and hints of strawberry, tart apple and star fruit, this wine will pair well with summer.  Try it with a fruit pizza or spinach salad with strawberries and walnuts.

Our first vintage is a 50/50 blend of Williamson and Sawtooth fruit.  It is a crisp blend of citrus, peach and apricot that pairs well with baked chicken or cod.

2008 Boise Blanco Riesling

 

Our first vintage of late harvest Riesling salutes the City of Boise with a nose like honey and the sweet, refreshing taste of apricot, peach and pineapple.  This wine pairs well with strawberry shortcake or local cheeses as a light appetizer.

2008 UP A CREEK! Syrah

 

Our first vintage of this wine comes from the Skyline Vineyard south of Nampa, Idaho.  The grapes were harvested later in the season allowing us to leave a little sweetness in the wine and a smoother finish.  This wine has notes of cocoa, blackberry, and grape along with a touch of new French oak.

2008 Petite Sirah

Our first vintage comes from the Polo Cove Vineyard on Homedale Road.  This inky wine has mellow hints of Raspberry and Cherry and a smooth finish.  It was aged in French oak for 10 months.
